Oca (Oxalis tuberosa) is a herbaceous plant with tubers similar to potatoes that is an important staple crop in the Andes and commonly grown as a root vegetable. It is very nutritious (an important source of vitamin C, potassium and iron, as well as other vitamins) and grows easily in poor soils and harsh climates.
